Slow Cooker Beef Stew From Scratch

These cold winter days have me craving ALL the comfort foods. One of my favorite easy comfort meals is Slow Cooker Beef Stew that I make from scratch. It is an easy meal, full of hearty veggies and tender beef. It takes just a few minutes to throw together and then cooks away in the slow cooker while you accomplish other things. Then, you get to enjoy a hearty winter meal without hours over the stove.

My favorite way to serve this stew is with a thick slice of crusty sourdough bread (that I also make from scratch). It is an easy meal to customize around your dietary needs or the ingredients you have on hand. As long as the baseics are in the slow cooker, you will porbably still end up with a yummy, hearty meal.

I am going to stop typing now because we all know the most annoying thing about internet recipes is tons of text and life stories you have to dig through to get to the recipe. LOL

Slow Cooker Beef Stew

  • Prep time: 10 minutes
  • Serves: 4 people

A simple, from scratch meal that will warm you up on a cold winter day. Beef and heart veggies make for a filling meal.



  • 1 pound Stewing beef or beef tips , Thawed
  • 4 Peeled Potatoes (cubed), Any variety will work but I like Russet
  • 4 large Carrots chopped into 1 inch pieces
  • 1 Yellow onion diced
  • 2 cups Beef broth, Homemade or store bought will work
  • 2 cloves Garlic (diced)
  • 1 tablespoon Salt
  • 1 tablespoon Pepper
  • 1 teaspoon Paprika
  • 2 stalks Celery (diced)
  • 1/4 cup Flour, (to thicken)


  • 1 cup Peas
  • 1 cup Corn
  • 1 cup Barley

Cooking Instructions

  • 1)
    1. Dice/chop all clean vegetables (potatoes, carrots, onion, garlic, celery) and add to crockpot
    2. Brown your beef tips and add to slow cooker. You can also add the beef tips right to the slow cooker if you are short on time.
    3. Add broth, flour, salt, pepper and paprika to slow cooker. (This is also the time to add any optional ingredients)
    4. Set slow cooker for 2-4 hours on high or 6-8 hours on low.
    5. Serve hot with side of your choice- I prefer crusty sourdough bread.


  • You can easily double this recipe to feed a larger group
  • This size recipe feeds my husband and I one dinner and lunch for both of us the next day as leftovers
  • This recipe is very forgiving and you can add/subtract ingredients according to dietary needs or what you have on hand. As long as the meat, broth and potatoes are included, it will have a good base.
